Cook Soy sauce chicken recipe

Soy sauce chicken, a staple chicken dish commonly found at Chinatown BBQ joints, is a northern Chinese dish. It is made of chicken that is cooked with soy sauce. The meat of the chicken is soft ,moist ,delicious, effortless and can keep for a few days after prepared. The thought of it just sets my mouth watering…

Here I would like to share my simple yet easy recipe with you:) , Do try out this soy sauce Chicken recipe (豉油鸡)!

Soy Sauce Chicken:~about 8 small servings

Ingredients for Soy sauce chicken recipe

4 1/2 pound live chicken
2 cups water
4 cups soy sauce
12 ounces rock candy/sugar
2 (3″x 2″ x 1″) pieces peeled ginger, smashed

Steps to Cook Soy sauce chicken recipe

You will need a pot that allows the chicken to lay in comfortably, but without too much space around it. See picture.

Cook Soy sauce chicken recipe

1. Fill the pot with soy sauce, water, rock candy, and ginger. Bring to a boil and continue simmering until rock candy dissolves.

2. While rock candy is melting, wash the chicken in cold water and cut off the  tail (discard the tail).

3. Put chicken in the pot back side down. Cover and boil for 3 minutes.

4. Turn the chicken over so that breast side is down. Cover and boil for 4 minutes.

5. Turn off the heat and leave the pot covered. Do not touch it for 5 hours. Do not open the lid!

6. Remove to a plate and let it drain for 15 minutes. (You can make other dishes at this time.)

7. Cut chicken with a cleaver and serve with rice.  Or with a salad and rolls if desired, making a wonderful meal, Very tasty! (If you’re not comfortable chopping through bone, you can serve it any way you like.)

Soy sauce chicken

The secret of this soy sauce chicken is the sauce!! It’s the same sauce and they cook chicken (usually whole) after chicken after chicken in it. All they do is add ingredients accordingly as it gets lower.It’s not uncommon to have sauce that is 100+ years old continuously either in the fridge or on the stove. Actually it’s taste better !!

So Save the sauce. It can be drizzled on rice, and you can make another chicken using the same pot of sauce.
