Today we bring you: Deep Fried Mandarin fish .This dish is a kind of sichuan cuisine and it could be the centerpiece of a whole table when you entertain guests. At the same time, it’s so yummy that you won’t want to put your chopsticks down.
In this dish, we choose the freshwater fishes. In Chinese cuisines, Freshwater fishes from lakes, rivers and ponds have always been preferred over ocean fishes, as the freshwater varieties are thought to have a more delicate texture. If freshwater fishes are hard to come by, fine-textured ocean fish such as perch, grouper or snapper can be substituted.
Ingredients for Crispy Fried Mandarin Fish Recipe:
1 whole mandarin fish, about 3 1/2 lb (1,500 g) or other whole freshwater fish such as perch, bass
2 tbsp Cornstarch
125 ml Chinese rice wine
8 cm Ginger, finely sliced
1 tsp White pepper, ground
1 stalk Spring onion, chopped coarsely (scallion)
1 stalk Spring onion, finely sliced for garnish. (scallion)
- Oil for deep-frying
The Sauce for Crispy Fried Mandarin Fish Recipe:
2 tbsp Chili paste
2 tsp Garlic, finely chopped
2 tsp Ginger, finely chopped
200 ml Chicken stock
1 1/2 tsp White rice vinegar
1/2 tsp Salt
1 tsp Sugar
2 tsp Cornstarch, blended with water
1 stalk Spring onion (scallion), finely sliced
Steps to cook Crispy Fried Mandarin Fish Recipe
1,Wash the fish under clean water.Prepare fish by making criss-cross scores on the flesh side and cut into 1 1/2 inch (4cm) square pieces, to help it cook more quickly.
2, Marinate the fish with pepper, ginger, chopped spring onion and rice wine and let it stand for about 20 minutes. Drain fish, scrape off the pieces of marinade and pat dry with a towel.
3, Heat oil for deep-frying and meanwhile powder the fish on both side with cornstarch.Dust fish bones with cornstarch before deep-frying can make it golden yellow and crispy.
4, Gently lower the fish into the oil and cook over medium heat for approx. 5 – 7 minutes or until golden brown and cooked through. Drain and keep warm on a serving dish.
5, To prepare the sauce, use one teaspoon of the frying oil to stir-fry the chili paste, garlic and ginger until fragrant, then add all the other ingredients, except cornstarch.
6, Simmer for 2 minutes, then thicken with cornstarch.
7, When the sauce bubbles, Pour the sauce over the fish and garnish with spring onions (scallion).
8, Serve immediately.
