Grapefruit Salmon is a clean, refreshing twist on oven-roasted salmon recipe,also known as Roasted Salmon with Grapefruit.This Cantonese cuisine salmon, with its puckery, citrusy jolt, may not be the most appropriate dish for a late-winter meal. The grapefruit-and-basil relish might seem more at home adorning a fish straight off the grill on a warm summer night (and that would be delicious).
To cook Grapefruit Salmon you will need:
4 pieces of salmon
1 cup fresh grapefruit juice and segments
1/2 cup chopped onions
1 tablespoon olive oil
Method to cook Grapefruit Salmon
1,Heat olive oil in large skillet over medium heat. Add onions and cook until tender.
2,Add grapefruit juice and segments, mix and add salmon pieces. Reduce heat, cover and cook 7-9 minutes, or until fish is done.
3, Place salmon on plates and pour sauce over the fish.
4,serve.
Light and refreshing. If it seems bland,you may add more salt and c pepper.
