Zhang Han, a native from Zhou, was serving as an official in Luoyang. One day when he was reading in his study, he heard wind suddenly sweeping through the trees, which reminded him of the favorite soup from his hometown made of fish and water shield. He thought to himself, if one cannot enjoy the comfort of lire, what’s the use of being an official serving a thousand miles away from home? So he resigned and went home. Later, the name of the soup became a synonym for being homesick.

Ingredients for Water Shield Soup with Shredded Meat:
100 grams (2/9 lb.)shredded meat
150 grams (1/3 lb.) water shields (a type of water-lily)
3 grams (1/2 tsp.) salt or to taste
2 grams (1/2 tsp.) MSG or to taste
5 grams (1 tsp.) preheated salad oil
Directions to cook Water Shield Soup with Shredded Meat
1. Add 500 grams (2 cups) of water in a pot and heat to its boiling point, quick boil the water shields, drain off the water and put the ingredients in a soup bowl.
2. Put 750 grams (1.5 cups) clear water in the pot and bring it to a boil.
3. Add in the shredded meat,a nd when the esoup boils again, skim off hte foam, add salt and MSG.
4. Put the soup in the bowl withwater shields in it.
5. Sprinkle on theoil and serve.
