3 med. bitter melons
3 T. fermented black beans, soaked for 5 minutes and rinsed twice
3 cloves garlic, crushed
1/2 c. water
1/4 c. vegetable oil

Steps to cook Bitter Melon In Black Bean Sauce

1, Slice butter melons in half lengthwise and discard seeds. Slice across into 1/2 inch slices.

2, Heat oil in frying pan over medium-high heat. Add garlic and black beans. Stir fry 2 minutes.

3, Add melon; stir 2 minutes. and then Add water, lower heat to medium-low, cover and simmer for 5 minutes.

4, Serve. Melon should be al dente.
