Utensils:Pot, wok, bowl, plate.

Ingredients for Egg with Sliced Balsam Pear:

balsam pear

1 balsam pear, seeded, sliced well (P1)
2 eggs, beat in a bowl, whisked lightly
1-2 tsp.chili paste
2-4 tbsp.vegetable oil
1 tbsp.chopped scallion
1-2 tsp.salt, or to taste

Step by step to cook Egg with Sliced Balsam Pear

1,Bring a large pot of water to a boil, add balsam pear and blanch for  about 1-2 minutes, until the color turns jade green. Drain well and set aside.

2,Add 2 tbsps vegetable oil in the wok, and turn on  fire to medium, saute scallion about 20 seconds,until aromatic.swirl into the egg mixture, stir fry over medium heat until egg have set, remove from the wok to a plate for later use .

3, Add another 2 tbsps vegetable oil in the wok, heat till hot, add blanched balsam pear slices, stir fry over medium heat until soft, about 1-2 minutes .

4,Put cooked egg back into the wok, continue to cook, then add chili paste, correct for salt when nears done

5. Serve .
