Pickled Cucumber salad ( 涼拌黃瓜 pinyin:liáng bàn huáng guā) is a a lightly pickled salad commonly served in china as a zesty appetiser. This cucumber salad gets it’s name from the apple cider vinegar. It lends a sweet and sour tang to this dish that reminds me of fresh pickles. Cucumber salad also makes a great topping for your turkey burger or salmon cakes in place of pickle relish.
Cucumbers are one of my favorite summer vegetables,a refreshing on a hot summer day.It’s common to have this for nearly every meal when the garden is in full swing.Pickled Cucumber Salad is a simple dish but it needs to be prepared half a day ahead in time.Today let’s come to how to cook this side dish recipe.
To cook Pickled Cucumber Salad recipe ,you will need the following Ingredients:
3 oriental cucumbers
1/2 medium-sized carrot
1 chilli pepper, sliced
5 cloves garlic, finely diced
3 teaspoons salt
1 teaspoon sugar
2 tablespoons white rice vinegar
Method to cook Pickled Cucumber Salad
1. Scrub cucumber skin well with clean water.
2. Cut cucumbers lengthways into quarters. Cut crossways into finger-length pieces.
3. Slice carrot into matchstick-sized slivers.
4. Sprinkle 2 teaspoons of salt over cucumbers and carrot. Mix well.
5. Refrigerate for 1 to 2 hours (refrigerate longer time equals more tender vegetables).
6. Rinse off salt and drain.
7. Add remaining teaspoon of salt, rice vinegar, garlic, chilli pepper, sugar. Mix well.
8. Refrigerate for another 3 to 4 hours, mix and serve.
Notes:
- You may add sliced sweet-pickled ginger for an added kick of spicy-sweet flavor or add seeded and chopped tomato for texture contrast.
- You can substitute the cucumber with other vegetables,for example, kohlrabi, cabbage or Chinese cabbage are all ok.

Pickled Cucumber Salad,this side dish recipe was often served as one of the Pennsylvania Dutch sweets and sours at large family dinners,and it goes with almost any meal,especially for coconut milk based curries, fried fish cakes or satay.
