Broccoli is a plant of the mustard/cabbage family Brassicaceae (formerly Cruciferae). It is high in vitamins C, K, and A, as well as dietary fiber; it also contains multiple nutrients with potent anti-cancer properties, such as diindolylmethane and small amounts of selenium. A single serving provides more than 30 mg of Vitamin C and a half-cup provides 52 mg of Vitamin C. The 3,3′-Diindolylmethane found in broccoli is a potent modulator of the innate immune response system with anti-viral, anti-bacterial and anti-cancer activity. Broccoli also contains the compound glucoraphanin, which can be processed into an anti-cancer compound sulforaphane, though the benefits of broccoli are greatly reduced if the vegetable is boiled. Broccoli is also an excellent source of indole-3-carbinol, a chemical which boosts DNA repair in cells and appears to block the growth of cancer cells. Broccoli has the highest levels of carotenoids in the brassica family. It is particularly rich in lutein and also provides beta-carotene.

A high intake of broccoli has been found to reduce the risk of aggressive prostate cancer based on more than 300 research studies on broccoli. Broccoli consumption has also been shown to be beneficial in the prevention of heart disease.

Vegan Broccoli with Mashed Garlic

Ingredients for Vegan Broccoli with Mashed Garlic recipe:

20 grams (2/3 oz) garlic
400 grams (0.88 lb) broccoli
200 grams (15 tbsp) salad oil
3 grams (1/2 tsp) salt
1 grams (1/4 tsp) MSG
50 grams (3 tbsp) water

Method to cook Vegan Broccoli with Mashed Garlic:

1, Wash the broccoli under clean water and cut into small squares. Remove the garlic skin and crush the garlic into a mash.

2, Heat the salad oil to about 110-1735℃ (230-275℉). Put in the broccoli and quickly deep-fry. Take out and drain off the oil.

3, Keep 30 g (2 tbsp) of oil in the wok, add the garlic mash, water, salt and MSG. Put in the fried broccoli and stir-fry until dish is done. Serve hot.
