Dragon Well Tea Shrimp (Longjing Xia Ren)

Dragon Well shrimp or Longjing Xia Ren is a popular dish in which shrimp are cooked and accentuated with the flavourful variety of green tea. Usually,we choose Longjing (Dragon Well) tea to cook this recipe.Renowned for its high quality and intensely fragrant body, Longjing tea is well regarded as one of the most famous teas produced in China. The coolness of this tea on one’s tongue is quite evident in this recipe .

And if you don’t happen to have Dragon Well tea, making this dish with regular Chinese green tea would also work if you’re craving tea-infused shrimp.

Dragon Well Tea Shrimp (Longjing Xia Ren)

Ingredients for Dragon Well Tea Shrimp (Longjing Xia Ren)

Longjing tea

Longjing tea

1/2 lb raw, peeled & frozen baby shrimp
1 tablespoon Shao-Hsing wine (a kind or yellow rice wine usually used in cooking)
1/8 teaspoon salt or to taste
2 teaspoons oil
1 heaped tablespoon Longjing tea leaves
1/4 cup hot water
Some chopped scallion
1 tablespoon egg white
1 teaspoon corn starch

Steps to cook Dragon Well Tea Shrimp (Longjing Xia Ren)

1. Defrost the frozen shrimp, rinse well, and pat dry with paper towels. Add corn starch and egg white to the shrimp and marinate for about 15 minutes.

2. Prepare the tea in a small tea pot by adding 1/4 cup hot water to the tea leaves. Set aside for 5 minutes and then filter the tea and set aside for the stir-fry.To brew the tea, place the tea leaves in a bowl. Boil the water and pour over the leaves. Cover the bowl and steep for 10 minutes. Strain the tea. Reserve the tea leaves and 2 tablespoons of brewed tea for the sauce.

3. To blanch the shrimp, heat a wok over high heat for 1 minute.Add 1 teaspoon cooking oil in a wok and Place the shrimp in the oil. Do a few quick stir until the shrimp is 50% cooked, dish out and set aside. Wash the wok and heat it up again with the remaining 1 teaspoon cooking oil.

4. Add the shrimp back into the wok, and quickly follow by the tea, Shao-Hsing wine, salt, and chopped scallion. Do a quick stir over high heat until the shrimp is cooked, dish out and serve immediately.
